The Food
All our food is handmade from fresh ingredients by a team of trained Thai chefs. The ingredients are all GM free and ethically sourced.
Unlike almost every other caterer, all of the cooking and most of the preparation is done on site, in the kitchen, right in front of the customers.
For a healthy and authentic flavour we only use fresh herbs and spices and never any artificial colourings, flavourings or preservatives.
The Kitchen
At present there is a brand new kitchen in construction ready for the 2008 season. It will be a combination of a hydraulically lowering trailer which will provide the practicalities like a fixed metal floor and a funky marquee to give the kitchen a unique, cool look in keeping with the demands of festival organisers.
The Crew
Our staff are uniformed smartly in our embroidered aprons, shirts and chequered chefs trousers where apropriate. Everybody is trained to at least food hygiene level 1. Both managers and chefs all have food hygiene diplomas.
Staff numbers vary from 2 to 12 depending on the event size. Most importantly, our staff are loyal because they enjoy the events we attend, hence customers receive excellent service.
Environmental Responsibility
We are dedicated to reducing the impact of the Thai Kitchen on the environment. All our packaging is recyclable or biodegradable - wooden forks, chopsticks and spoons, cardboard cups, oriental boxes and soup bowls. The bulk of our energy usage is LPG which is byproduct of the petroleum industry. We aim to halve our consumption of diesel this year through the purchase of a new more fuel efficient van, which also conforms to the latest Euro 4 emmisions levels. Every journey is carefully planned so that wherever possible it will never run empty.
Health & Hygiene
We are members of NCASS, a respected trade body and hold £5 million of public liability, £5 million product liability and £10 million employers liability insurance.
Registered with the environmental health department in Hereford and inspected at events at least 6 times a year. We operate an HCAAP system supplied by NCASS.
We aim to be much better than the minimum required standard, after all a clean kitchen sells more food!
Our Reputation
For the last 5 years we have been building an excellent reputation as an alternative event caterer. We have received much praise from customers and event organisers alike and have been invited back
to every event we've catered for.
Bookings & Enquiries
We have bookings through to 2010, so it is never too early to book! By mid April we are usually fully booked for the summer months.
